Kindergarten Recipes
Kindergarten has really enjoyed our cooking projects on Fridays. The kids have asked me to share some of there favorite recipes. Visit often!
Zucchini Crunch
zucchini
grated parmesan

italian seasoning

pepperoni (optional)
1. Slice zucchini. Place on a baking sheet and salt.
2. In a small bowl, combine parmesan, panko, italian seasoning to taste. Add a drizzle of oil to the bowl and mix.
3. Blot excess moisture of the zucchini slices.
4. Sprinkle wil panko mixture. Add pepperoni if desired.
5. Bake at 425 degrees until golden brown. (About 7-10 minutes.)

Soft Pretzels (prayer pretzels)
1 pkg active dry yeast
1.5 cups warm water
1 tablespoon salt
4 cups all purpose flour
1 egg, beaten (can be eliminated for allergies)
coarse salt
1. In a large bow, dissolve yeast in warm water.
2. Add the sugar and salt and mix.
3. Add 3 cups flour and combine. (We used a bread machine.)
4. Add 1/2 to 1 cup more flour as needed.
5. Knead for 5-8 minutes until the dough is smooth and elastic.
6. Shape into pretzel twists or desired shapes. (We made praying hands.) Place on a lined greased baking sheet. Brush with egg; sprinkle with coarse salt.
7. Bake at 425 degrees for 12-14 minutes or until golden brown. Cool on a wire rack.

Wojapi (Lakota Tribe Berry Soup)
5 pound bag of frozen berries (We used strawberries, blackberries, blueberries, and raspberries.)
2 cups of sugar or to taste
8 cups of water
4 tablespoons of cornstarch dissolved in cold water
Put the frozen berries in a stock pot with water and sugar. Simmer until softened. (We used a Crock Pot.)
Mash the berries with a potato masher.
Add the dissolved cornstarch slowly, stirring until incorporated.
Can be served warm or cold.

Eggless Pancakes |

Ingredients:
1 cup flour
1 tsp sugar
1/4 tsp ground cinnamon
1 cup milk
1 TBS vegetable oil
1TBS water
1 tsp vanilla extract
2 TBS butter
Whisk dry ingredients together.
In a liquid measuring mug, measure out one cup of milk. Add vegetable oil, vanilla and water.
Stir wet ingredients into the dry ingredients. Do not overmix.
Heat griddle to medium-high heat. Once the pan is hot, add butter and allow it to melt.
Add the melted butter to the pancake batter and mix.
Cook as you would regular pancakes.
